You won’t believe how easy it is to make this hearty and heart-warming lentil soup. This ancient dish is full of nutrition especially iron and fiber. It is a very delicious vegetarian soup that can be eaten in the cold winter months or even a nice crisp spring day, with nice toasted bread and a splash of olive oil. During Lent, in my family we abstain from eating meat so we tend eat a lot of delicious Fakes.
Lentil Soup (Fakes)

Ingredients
- 1 pound lentils
- 5 tablespoons olive oil
- 1 can of tomato sauce (6 ounce)
- 2 garlic cloves
- 1 medium yellow onion finely chopped
- 2 celery sticks
- 2 medium carrots
- 1 bay leaf
- 1\2 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
- vinegar (to taste)
Instructions
- Chop carrots, celery and onions.
- In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender.
- Stir in garlic, bay leaf, and oregano cook for 2 minutes.
- Stir in lentils, and add water and tomatoes.
- Bring to a boil. Reduce heat, and simmer for at least 1 hour.
- Season to taste with salt, pepper, and vinegar if desired.
- Servings: 4-6
